Grilled Salmon with Dry Spice Rub

Serves 4
4 salmon filets
4 teaspoons Herb + Spice Dry Rub Seasoning
1 tablespoons canola oil
3 shallots, peeled and chopped
1 1/2 cups frozen corn
1 1/2 cups frozen peas
Salt and pepper
1 cup salsa
Place the salmon on your work surface. Top each piece of fish with the BBQ spice rub. Allow to sit for 30 minutes.
In a saute pan heat the canola oil. When hot, add the shallots and cook for 4-5 minutes. Add the corn and the peas and saute for 7-9 minutes, salt and pepper to taste. Transfer to a bowl.
Preheat your grill or prepare the saute pan, just make sure there is still a bit of oil in the pan. If not, add a teaspoon or two.
Place the salmon, skin side down and cook for 4-5 minutes. Turn and cook for an additional 3-4 minutes. If you prefer your salmon on the rare side, cook for 2-3 minutes per side.
Divide the vegetables between four plates. Place the salmon on each of the plates, top with salsa.
